Tricolor Grape Pizza with Goat Cheese and Thyme
Ingredients
- 1 pound prepared pizza dough
- 2 ½ tablespoons extra-virgin olive oil
- 2 cups halved green, red, and black California grapes
- 2 tablespoons fresh thyme leaves, or 2 teaspoons dried
- ¼ cup coarsely chopped walnuts
- 2 ounces fresh goat cheese, crumbled
- 2 tablespoons freshly grated Parmesan cheese
- Freshly ground pepper
Directions
- Position a rack in the bottom of the oven and place an inverted baking sheet on top of the rack; heat oven to 500 F.
- On a lightly floured surface, press the pizza dough into a 10-inch round circle and cover with a towel while preparing the toppings.
- Sprinkle another large baking sheet lightly with flour. Stretch the pizza dough into an oval, about 14 inches x 10 inches, and place on the sheet. Drizzle the oil over the dough. Sprinkle the grapes, thyme, and walnuts on top. Place the baking sheet on top of the other sheet already in the oven and bake until the crust is bubbling and golden, 8 to 10 minutes.
- Remove the pizza from the oven. Sprinkle the goat cheese and then Parmesan over the pizza. Season with pepper. Transfer pizza to a board, cut into pieces and serve warm.
